Green Pizza?
At Palermos Pizza, we have a long history of depending on the land. Going back to the rich soil our founder Gapare and his wife Zina worked back in Sicily to the great farms of the American Midwest we depend on today for the fresh ingredients in our gourmet frozen pizzas, we owe a great deal to the planet, and the wonderful gifts it's given us through the years. As such, we are a company committed to environmental sustainability. Here are just a few ways in which we voluntarily limit our ecological impact:

Recycling program:
  • All discarded paper stock and cardboard is recycled.
  • All plastic from both employee use such as water or soda bottles and production is compressed, bundled and recycled.
  • All rejected materials from our bakery are recycled and made into high quality animal feeds.
These beliefs were paramount in the design of our headquarters and factory: Villa Palermo. Design Highlights:
  • Facility built on a reclaimed brown-field area.
  • All office lighting is motion activated.
  • Grounds use low-mow / no-water grasses.
  • Skylights provide natural light reducing electrical use.

What's in a Name?
The name Palermos Pizza comes from Sicily, where our founder Gaspare and his Wife Zina are from. They named the company after Palermo, the capital of Sicily. It has around 1.2 million people in it's metropolitan area and is over 2,700 years old!

One of the biggest events in all of Sicily is The Feast of Saint Rosalia on July 15th. It is a celebration of food family and friends taken to epic proportions. Hundreds of thousands of people join together to sample each-others family recipes, and the resultant mix of flavor and culinary creativity is unmatched in nearly all the world- just ask anyone who's been!

It's this spirit of great food, friendship and creativity that drives us at Palermos Pizza to produce the finest gourmet pizza available, and release products you just can't get anywhere else like our Hearth Italia line that's pre-baked in a marble-hearth oven.

Though you should really plan a trip to Sicily sometime in your life, in the mean time, you can enjoy Palermos Pizza!

Palermo's Pitches In For Flood Relief
Palermo's Pizza is proud to be part of their community, both in Milwaukee and in the Midwest as a whole. And being part of a community means helping out members of the community when they need it.

Chef Dax's Pizza Grilling Instructions
Grilling is a great way to enhance the flavor and texture of your Palermo's pizza. While grilling may take a little longer than traditional methods it is well worth the effort and is also a great way to keep the house cool by not turning on the oven on a hot day.

Both charcoal and gas grills are well suited to baking Palermo's pizzas and both have different advantages; gas grills are more convenient with quick preheat and even consistency while charcoal will give it a little more added flavor. No matter which style of grill you choose there are three musts when grilling a pizza:
(1) A grill with a lid
(2) Indirect heat--the heat from the grill should not be directly under the pizza and
(3) A love for great pizza.

Tips if you are using a gas grill:

- Pre-heat the grill to required temp setting for 10 minutes; only turn on the burners that will not be directly under the pizza.

- If you have enough room to have a lit burner on 2 sides of the pizza great, otherwise just light one side and cook the pizza on the lit side.

- Keep the lid closed as much as possible. If your pizza toppings do not look done but your crust is finished you may be opening the top too much and allowing the heat to escape.

- Always turn your pizza once during the grilling process.

- Clean your grates before & after you cook your pizza.

- Gas gills do vary greatly; please rely on experience and appearance.

Tips if you are using a charcoal grill:

- Pre-heat the grill by building a fire with the charcoal until the briquettes are covered with a light gray ash-this is the main sign the coals are ready to cook with.

- Because most charcoal grills are round you will need to spread the coals around the outside of the base, leaving the middle empty; similar to a doughnut shape. Or push all the briquettes to one side.

- Keep the lid closed as much as possible. If your pizza toppings do not look done but your crust is finished you may be opening the top too much allowing the heat to escape.

- Always turn your pizza once during the grilling process.

- Clean your grates before & after you cook your pizza.

- Charcoal grilling heat will vary greatly, please rely on experience and appearance.Primo Thin & Hearth Italia grilling instructions:

- Keep pizza frozen until ready to grill.

- Preheat grill to medium/low temp setting (roughly 400 degrees f).- Set up grill with indirect heat.- Remove Primo Thin pizza from all packaging.

- Place pizza directly on grills grate. Do not place directly over heat source.

- Keep lid closed as much as possible, the heat trapped from the lid will cook the toppings properly.

- Turn pizza at least once during grilling process.

- Bake 10-15 minutes or until crust is light brown and cheese is melted and golden brown. Grills will vary widely; rely on experience and appearance.

- Let rest 2-5 minutes to cool slightly before enjoying.

Rustico grilling instructions:

- Please note: bottom edge of Rustico closest to the flame may darken heavily due to the longer bake time required. If you prefer to avoid this, place a piece of tin foil under the pizza prior to grilling.

- Keep pizza frozen until ready to grill.

- Preheat grill to low/medium temp setting (roughly 375 degrees f).

- Set up grill with indirect heat.

- Remove Rustico pizza from all packaging.

- Place Rustico directly on grill grate (or use tin foil as mentioned above). Do not place directly over heat source.

- Keep the lid closed as much as possible during the grilling process, the heat trapped from the lid will cook the toppings properly.

- Turn pizza at least twice during grilling process.

- Bake 27-33 minutes or until crust is light brown and cheese is melted and golden brown. Grills will vary widely; rely on experience and appearance.

- Rustico's are a heavily topped thick crust pizza that will need a little time to cool and set up properly after grilling, let rest 5 minutes before enjoying.
